A Healthy Chocolate Brownie

So, starting about the 8th of February my husband and I embarked on a new health journey.  We went on the Arbonne 30 day cleanse.  In addition to the supplements and shakes you need to cut out sugar, grains, unhealthy fats, honey (our normal sweetener) nitrates, corn ect…  So there went many of our “healthy” snacks.  I’ve been experimenting the last 2 weeks with sweet snacks using stevia extract as the sweetener. Some have been ok, but this one is absolutely delicious and tastes just like an indulgent dark chocolate brownie!

 

On a side note, this requires no cooking, so its really fun to do with your kids!

 

1 cup almond butter

almond milk (unsweetened)(about 2-4 tablespoons)

stevia extract powder (experiment with your desired sweetness, I used about 6-8 teaspoons)

2/3 cup cocoa powder (unsweetened)

3 cups unsweetened coconut flakes

1 cup nuts

 

In a food processor dump all ingredients, pulse until chunky but well mixed.  Check mixture.  If its too dry to make a ball that sticks together add more milk.  If it needs more sweetener add now.  Pulse again.  After desired texture and sweetness are reached press into a pan and place additional nuts on the top if desired.  Cover & refrigerate at least 2 hours.  Cut into squares & enjoy!
