Whole Wheat Buttermilk Rolls

So, I freely admit I’m a homemade bread fanatic!  And since I only cook with 100% whole wheat I’ve been on the look out for several years for the “perfect” recipe.  I have finally found it!  I’ll hope you’ll try this out and let me know how you like it! 

 

1/2 cup warm water

2 tblspoons active yeast

1 cup buttermilk

1 stick butter, softened 

1/3 cup honey

3 large eggs

1 1/2 tsp. sea salt

2 tblspoons vital wheat gluten

5-6 cups whole wheat flour (I recommend Prairie Gold)

 

Preheat oven to lowest setting, Turn off.

In small bowl combine water & yeast.  Let sit.

In mixing bowl put butter and honey and cream together.

Add buttermilk, eggs, yeast water and mix well.

Add wheat gluten and 1 cup flour then add salt.  Mix well.

Put on dough hook.  Add flour 1 cup at a time until sticking together.  

Add flour gradually on speed 2 until dough is bouncy.

Place in oiled bowl and put in oven to rise 50 minutes approximately.

Punch down, divide into 12 large rolls or 24 smaller ones.  

Place in oiled pan and put back in oven to rise 40 minutes.

Turn on oven to 350 degrees (with rolls in).

Bake 20-25 minutes or until golden brown.

Brush with butter & enjoy!

You can also roll out the dough flat before the second rise & cover with cheese and then make into rolls or you can cover in butter and cinnamon & honey & nuts for cinnamon rolls!
