Grocery Budget Makeover, Part #2
So, last week I started a series on my grocery budget makeover . How’s it going, you may be wondering? Often we start out with really high hopes, only to crash hard after a few days. However…..drum roll please…. it’s going really great so far! It’s been a week since we grocery shopped and we still have plenty of groceries for another week! Woohoo! Yes, I’ve ordered a few things like coffee and truvia (from Sam’s Club, I get free shipping!) but no extra trips to the grocery store and I’ve stayed in my budget of $300/2 weeks.
What am I doing to redo my grocery budget?
- Limiting snacks. They really fought this one the first few days!

Limiting convenience foods like deli meat and sandwiches.

Making oat waffles for breakfast. Side note:. I figured up these cost $0.33/each to make! Toss in syrup and it’s about$0.50/each. My kids and I each eat one so breakfast costs $2.00 for us! Wow! (Recipe at the end)

Using rice, beans or potatoes as the main star in our meals. This has significantly cut our consumption of meat. Since meat costs the most, it’s cut our spending a lot!

Cut down on coffee. Ok, this actually wasn’t because I wanted to save money. I started it because I wanted to see if I would sleep better at night without drinking coffee in the evening. It just happened that I’ll be drinking half the amount of coffee and since we buy whole beans that are a little pricier it’s going to be saving us quite a bit.
And that’s how I’m doing so far. Oh, yes, I’ve been checking my accounts on mint.com and it is so convenient to have all my stuff in one place!

Oat Waffles:
- 3 cups ground oats (grind in blender until smooth)

4 tsp. Baking powder

1 tsp. Sea salt

3 eggs

1/2 cup oil or butter

Buttermilk
Blend dry ingredients, add wet ones then add enough buttermilk to make a thick batter. Let it set while the waffle iron heats. Bake until crispy. Serve with syrup. Makes 6 hearty waffles!
